I have been having oat meal/porridge everyday for breakfast during the week.I wanted to switch things up a bit.I decided to make granola bars because I need to carry snacks with me all the time especially when traveling. Gluten-free/dairy-free options can be very limiting. Enjoy the recipe!
What you need:
3 cups of gluten-free rolled oats( I use bob's red mil)
2 cups of nuts combined (for this I used , pecans, walnuts) You can use almonds or any other nuts of your liking. I didn't realized I had almonds when I made this :(.
Salt to taste
1/4 teaspoon cinnamon
1/2 teaspoon vanilla/almond extract
1 cup almond milk
1/2 cup pure maple syrup (or honey or both)
3/4 cup dried fruit (I used dried blueberries)
Directions:
- Mix together oats, nuts,, salt, cinnamon, and blueberries/pecans/walnuts. Whisk together milk and maple syrup. ...
- Spread out onto a parchment lined baking sheet. Bake in a preheated 350 degree oven for 20-30 minutes.
- Remove from the oven, and let cool completely.
