Lentil Salad |
One of my favorite Salad. Lentils are a high protein, high fiber member of the legume family. Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. As a vegetarian/Pescatarian, A lentil salad is my go to when in need of some protein. I had no idea lentils were so tasty and filling.
I hated salads until My colleague shared this recipe with me. I wanted to make the easier/less complicated version of the recipe. Here it is.
What you need:
1/2 to 1 cup of lentils(I like the green ones)
5-10 Grapes tomatoes
1 cup of spinach(washed and chopped)
1 ripe Avocado
Dressing:
Olive oil, Balsamic Vinegar, 1 slice of lemon, red onions( chopped), salt, pepper to taste. Mix together in a small bowl.
I don't really measure. I feel that it takes the fun out of cooking.
Prep:
Boil lentils in salt water for about 25-40 minutes.
Chopped tomatoes, spinach.
Slice avocado.
In a salad bowl add cooked lentils to spinach, tomatoes, add dressing and mix together with a tongue or fork.
Add avocado as garnish.
Enjoy!

I tried this salad...literally out of the bowl! I was skeptical about no measurements, but then found that it was kind of fun just winging it. ��
Saw this on you YouTube video for your pescatarian meals. Can you please post the recipe for the seasoning you used for your salmon? And how you rinse them?
